Curious, different, creative.

After an international journey of study and professional experience that led me to live in the United States and Brazil, I chose to return to Italy to bring my expertise back to my roots.

I have created a unique fusion concept that combines the finest products of my region, Umbria, with the refined techniques of sushi.

Today, I present my “Sushi Umbro” at the Hilton “La Rosetta” in Perugia.

Chianina beef tartare, truffle, Norcia prosciutto, as well as river and lake fish, represent just a selection of the ingredients that define my culinary vision.

With my staff we do also provide catering with classic food (not only sushi) tailoring on clients requests, pizza nights and wine and cocktail pairing.

I'm fluent in English, Portugues and Spanish.

Dopo un percorso di studio e di lavoro che mi ha portato a vivere negli Stati Uniti ed in Brasile, ho deciso di rientrare in Italia utilizzando le mie esperienze acquisite.

Ho creato il primo fusion che utilizza i prodotti d'eccellenza della mia regione, l'Umbria, con la tecnica del sushi.

Sono presente con il mio Sushi Umbro all'interno dell'hotel Hilton "La Rosetta" di Perugia.

Tartare di Chianina, tartufo, prosciutto di Norcia, pesce di fiume e di lago...sono solo una parte di ciò che utilizzo nel mio lavoro,

Sono specializzato, inoltre, nella lavorazione ed utilizzo esclusivo di prodotti vegetali regionali.
