We booked Paola for a dinner at our rented Villa. The party included 4 adults (one pescatarian) and 3 little kids. Paola and her husband were super prepared and extremely pleasant. Before setting off to work Paola took us through the food prep plan and then set off to work. She began with the kids meals of fresh orecchiette pasta with red sauce and meatballs, which the kids gobbled down. Then the adults sat down to an AMAZING meal. We started off with a squid and potato salad, and sautéed mussels and marinated anchovies on buffalo mozzarella. Followed by spaghetti with mussels and clams, followed by Eggplant parmigiana with fish sauce. We topped the meal off with Salento pasticciotti for dessert. Everything was lick your plate delicious! As we finished off our meal Paola and her husband cleaned the kitchen until it sparkled. If we were staying longer we would 100% book Paola again.
