Chef At Home in Cardiff
I began my career at Gordon Ramsay at Claridges, where I was senior sous chef and also worked at his other Michelin starred London restaurant Maze, and 3 Michelin starred Restaurant Gordon Ramsay.
I then moved to 2 Michelin star Restaurant Marcus Wareing. Following this I worked in Germany with Matthias Schmidt and Tim Raue who both held 2 Michelin stars, as well as Juan Amador who held 3 stars.
Following this I came back to London as sous chef of Michelin starred Restaurant Tom Aikens before taking the reins as Head Chef of Michelin starred Hedone. I then moved back to Gordon Ramsays Michelin starred Petrus as Head pastry chef
I took a long break from the kitchen to start a family before opening my own restaurant Cora- listed in the Michelin guide and seafood bar Jackson’s
My food is very simply done using quality produce and classical techniques. At the restaurant I serve a set tasting menu focussing on seasonal produce.
