I have been breathing traditional Apulian recipes since I was born. It is very difficult for an Apulian to leave the kitchen of his mother (in fact a dish in Puglia has about 2,000,000 recipes and never argue about the superiority of one over another ... mom is always the mother, for everyone here!)

And it was my mother who left me the precious gift of our uncontaminated cuisine and the respect and care of the "good" of "prepared well, with love".
