Known for his decadent French/Carribean creations and his artistic use of color, Albertho Appolon uses farmers market ingredients to create mouth watering dishes that dazzle.

A native Haitian, 24 year old Appolon has already led kitchens in Miami, Los Angeles, and Texas. His scratch-made cuisine is packed with luscious flavor and a visual presentation that keeps people coming back for more. With his early career successes, and dedication to culinary excellence, Appolon is setting the stage for a new generation of young Chefs.

He is currently the Head Chef at the Saint-George hotel In Marfa Texas.
