Hello! My name is Anthony, and I’m a passionate chef with over fifteen years of experience in the culinary field. Throughout my career, I’ve embraced every role in the restaurant industry—from executive chef and owner/operator to dishwasher. This journey has allowed me to cultivate a palate for comfort food, blending classic techniques with modern influences to create a unique style of cuisine. My dishes are a fusion of classic comfort food and elegant, modern twists, evoking memories of cherished holiday meals or joyful Sunday dinners shared with friends and family.

I take great pride in transforming the simple into the unforgettable. Picture a traditional Sunday roasted chicken, brined in pink peppercorn and rosemary, stuffed with truffle butter, and served with fluffy biscuits drizzled with honey butter. Or consider a vibrant heirloom tomato and pistachio salad, delicately dressed with toasted pepper and lemon oil. My culinary philosophy centers on comfort food with elegance, as I believe that food creates memories—memorable moments that we treasure for a lifetime. It’s my true honor and passion to help craft these experiences for my clients over a meal they will cherish.

Five of my years as a chef were spent on the stunning southern coast of Highway One, from Monterey to Big Sur. I had the privilege of working with esteemed companies such as Coastal Luxury Management, the founders of the Pebble Beach Food and Wine Festival, and Casanova Restaurant in the picturesque foothills of Carmel-by-the-Sea. Here, I specialized in a diverse range of cuisines, from traditional French to rustic Italian, seamlessly pairing flavors with exquisite wines.

For the past ten years, I’ve focused my energy on local establishments in Montana, making my mark in Philipsburg, Red Lodge, and Billings. I have a deep appreciation for the classic Montana steak and potatoes meal, and I firmly believe that the best dishes don’t need to be overly complicated. They should allow the ingredients—and the hard work of our dedicated farmers and ranchers—to shine. It’s all about making food beautiful in its simplicity.
