Get to know me better
I keep a few things in mind when cooking: let the ingredients speak, let time do its job and trust intuition.
I’m a professional chef with 12 years experience. My Italian mother taught me to cook growing up and I got my first kitchen job at 16. I strongly believe you can learn skills in any kitchen no matter the quality. From proper dish machine maintenance to tasting menu pricing, all learned skills are important. I moved from Salt Lake City/Park City to the North Oregon coast 2 years ago. The availability of fresh seafood has been the best part. Forming relationships with local farmers and fishermen has been exciting and informative. I love showcasing the best version of whatever ingredients are in front of me; I don’t mask their flavors with useless intricacy. ‘Intention’ is my mantra. An ingredient can be added but it needs to serve a purpose for the dish (whether it be visual, taste, textual, etc).
