Chef Greg brings over 15 years of professional cooking experience, including 10 years dedicated to Michelin-rated fine dining. His culinary foundation was shaped early in his career within Chicago’s Michelin-starred restaurant scene, where he developed discipline, precision, and a deep respect for technique and ingredient integrity.
Fine dining in Vail first brought him to Colorado, but it was Aspen’s vibrant and dynamic restaurant culture that truly captured his culinary passion. Immersed in the state’s evolving gastronomic landscape, he continued refining his craft while embracing creativity and innovation.
In Denver, Chef Greg has worked with acclaimed establishments such as Uncle & Hop Alley, The Wolf’s Tailor, and The Culinary Creative Group. These experiences allowed him to cultivate a distinctive culinary voice, influenced by the diversity and originality of Denver’s top chefs.
