A graduate in Culinary Arts from Universidad del Valle de México (UVM), he has developed his career within some of the most demanding gastronomic environments across Europe and the Americas.
His professional path includes training in Michelin-starred restaurants in Spain, notably at El Corral del Indianu in Asturias, where he strengthened his foundation in contemporary fine dining, seasonality, terroir-driven cuisine, and meticulous execution. His experience expanded further in France and Italy, immersing himself in classical European techniques while embracing a modern and refined culinary perspective.
In the United States and Mexico, he has held key kitchen positions in luxury restaurants and hotels, including Cipriani Beverly Hills, and has participated in high-end culinary events. These roles helped shape a cuisine that is elegant, disciplined, and technically driven, where every element on the plate serves a clear purpose.
Jonathan’s culinary philosophy reinterprets Mexican heritage through a contemporary lens, applying the discipline and structure of European haute cuisine to create balanced, expressive, and identity-driven dishes. Seasonality, ingredient integrity, and precision are central pillars of his work.
