Peruvian professional chef & consultant graduated from Le Cordon Bleu Perú with more than a decade of experience mainly in Japanese, Latin American, Asian, BBQ's, Italian and French cuisines.

I started working in Peruvian & Japanese food at the start of the Toshiro Konishi and Nobu boom 10 years ago in Lima, Peru. After 5 years of specializing, I opened my first street food restaurant with a democratic fine dining experience. I successfully ran it for 2 and a half years until I got an offer to open another project in Tel Aviv / Israel. Unfortunately, the pandemic cut that project short. But that didn't turn me off!! I found other opportunities and spent the next 3 years of working in some restaurants ranked in the top 50 across the Middle East & North Africa.

I arrived in San Diego with my wife in 2022 to settle and live the dream! and after a year of researching and developing new and old recipes I’m working at one of the most amazing local sushi experiences in the country!
