I’m Chef César Arredondo, born in Tijuana, and I grew up in Guanajuato, proudly based in Baja California.
My culinary style, called BAJAX, bridges two vibrant Mexican regions: the rich traditions of El Bajío and the freshness and creativity of Baja California.
My journey began at Hacienda San Cristóbal, where I discovered my passion for cooking. Since then, I’ve worked across private kitchens, catering companies, and fine dining restaurants — always refining my craft and culinary philosophy: to create memorable gastronomic experiences where each dish tells a story.
I work with local ingredients — Pacific seafood, Valle de Guadalupe produce, northern meats, and Bajío chiles — to craft menus that celebrate both heritage and innovation.
Each experience includes everything: I source the ingredients, cook in your home, serve every dish, and leave your kitchen spotless. All you have to do is enjoy.
I believe great food starts with respect — for the ingredient, the producer, and the guest. Cooking is not just nourishment; it’s connection.
