Chef Joe Seeds

I am a professional chef with over 30 years of experience, specializing in a wide range of cuisines including Asian, Latin, French, Italian, Spanish, Caribbean, Indian, and Middle Eastern. Throughout my career, I have developed a versatile and refined approach to cooking, combining global influences with strong technical foundations.

Since 2008, I have been based in Colorado, where I have held Executive Chef roles at establishments such as Blue River Bistro in Breckenridge, C Lazy U Ranch in Granby, Great Northern Tavern DTC, La Tour in Vail, Milk & Honey, Panzo, and the JW Marriott Cherry Creek in Denver. These experiences have strengthened my leadership, creativity, and ability to deliver high-quality dining in diverse settings.

Earlier in my career, I worked in Philadelphia with restaurateur Stephen Starr at notable concepts such as POD, Buddakan, Continental, and Continental Midtown. I also gained valuable experience in Miami, working alongside James Beard Award-winning chefs Mark Militello and Oliver Saucy, where I focused on Latin and Caribbean cuisine.

My goal is to bring this depth of experience into every dining experience I create, delivering thoughtful, well-executed dishes that reflect both technique and a passion for global flavors.
