He has seared fish in a fire built by hand in the Cayman Islands, roasted duck in Rio, and learned to speaks four languages in between.

All of Charles’s experiences have shaped his critically acclaimed style of cooking. Each meal Charles prepares is a journey through the places that he loves most- filled with complex and approachable spices that make for a one of a kind dining experience.

Chef Charles was enthusiastic and professional. You can tell he really loves food and bringing people joy through his recipes/meals. He talked with me through the menu, gave us wine recommendations to pair with each course, and made the trek to our air bnb outside of the Chicago area to make us a great dinner. Would definitely recommend for a private meal.

Chef Charles was so great! Not only was his food delicious, but he was also really fun!

Had a great experience with Charles. He was flexible and he was very knowledgeable about the dishes. The ingredients he included in the dishes were incredible.

Chef Charles was a blast. Engaging. Food was awesome. My guests loved him. Even my daughters had a blast watching and listening to him prep.
