Chef with 15 years’ experience in Omakase and Latin-Japanese fusion. focused on delivering unique experiences and unique flavours.
I’m Julio Miranda, a sushi chef with over 15 years of international experience.
I hold a degree in Gastronomy and Nutrition from the University of Vic in Barcelona, and have worked in prestigious restaurants and hotels across Spain, England, Germany, the Netherlands, Costa Rica, and the United States.
In Barcelona, I worked at Robata, one of the city’s top sushi restaurants.
In London, I honed my craft at The Ned Hotel and Aquavit, a Michelin-starred restaurant.
I also gained experience in San Sebastián, and currently work at Kabooki in Orlando, recognized as the best sushi restaurant in Central Florida.
My cuisine blends Japanese precision with Latin passion, focusing on Omakase and Latin-Japanese fusion.
I believe every dish should tell a story — crafted with fresh ingredients, balance, and emotion.
