History

Pablo Gimenez Melo has cooked throughout Latin America for over 20 years, but his love for wine and organically grown produce drew him to Northern California. Pablo was born in Santa Fe, Argentina riding horses and playing in fruit trees on his family's farm, where his sensual palate was informed by fresh flavors and aromas. He learned classic European culinary skills from his French grandmother Julia, while his father taught him the Argentine Asado grilling tradition of the Río de la Plata. Vacations spent at family friends’ vineyards in Mendoza and Salta further educated Pablo’s palate in international wines. Pablo's deep connection to the natural world informs his flavor infusions that transform the California dining experience.

The first invitation-only dinner parties began in Buenos Aires in 2006, and expanded to Bogota bringing together art, music, wine and food. In 2016, Pablo's ‘secret’ dinner events grew to include San Francisco, partnering with other chefs and sommeliers, with locations announced weekly online. His Dinner Parties and Dinner at Home, bring a professional restaurant experience to a more intimate setting.

Pablo creates Food and Wine Experiences for companies dedicated to international luxury tourism.

Our dinner with Chef Pablo was awesome. He arrived exactly at the designated time and got right to work preparing the meal. Every dish was delicious and after each course, Pablo and his son were there to clear away the dish and present the next course. We didn't have to do anything. Pablo and his son made sure our wine and water glasses were full and that we had everything we needed. They cleaned the kitchen before departing and did an overall fabulous job!

Pablo was so easy to work with. My surprise menu was over the top and extremely well received by my guests. Pablo and his son JP interacted with my guests with ease and were extremely attentive to our questions and needs. Having Pablo and JP there allowed me to interact with my guests and I never worried about the meal all evening. I would certainly use their services again and highly recommend them to anyone in need of a private chef.

Truly one of the best meals we’ve ever had! The quality of halibut and NY steak were top notch. The presentation beautiful and professional. We had a seated served dinner and the entire experience could not have been better. It's been a real pleasure having had Pablo over at our place. We enjoyed a wonderful dinner, which was made even more special by Pablo adding a personal story here and there to the dishes served and relating it to his own Argentinian upbringing and culinary experience. Highly recommend him and will surely have him over again.

Our menu consisted of fresh bruschetta , arugula salad, salmon tostada, steak with chimichurri, and grilled fruits with ice cream, SO delicious!
