I was born and raised near Turin, Italy, and I live in the USA since about 10 years.

I studied at culinary school during 4 years (16 to 19 years old). At the age of 20 I moved to Paris where I've lived for 2 years, learning some French techiques and the beautiful local language.

At the age of 22, I had the luck to move to NYC where I've lived for 4 years. I loved the city and the restaurant world I found over there.

In 2020 I moved to Dallas to chaise a more relaxing life during hard times.

In 2024 I moved back to NYC, where I truly enjoy the Restaurants and Bars scene, full of talent, passion and innovation.

I cannot recommend Chef Paola highly enough! My partner and I wholeheartedly and passionately agreed that wherever Chef Paola is on a given night in the DFW Metroplex, is where the best Italian dining experience happening, period! From her excellent communication, outstanding professional demeanor, and from concept to plating, Chef Paola's understanding - and use - of flavors and flavor combinations is absolutely stunning - and doubly so, given the simplicity (few ingredients) of her recipes. Her focaccia bread, tiramisu, risotto and chocolate mousse recipes, redefined our experience with and established a new pinnacle for those Italian staples. Brava and mille grazie, Chef P!
