Chef Dave Thielmann

With over two decades of culinary experience, I have developed a dynamic career across British Columbia’s vibrant restaurant scene. I began my journey in 2000 at Mission Springs Brewing Company, where I advanced from fry cook to Sous Chef in under a year. Since then, I’ve built a reputation for creativity, leadership, and a commitment to excellence in diverse kitchen environments.

After honing my skills at the Strathcona Hotel in Victoria, I moved to Vancouver, where I became Chef de Partie of Pasta at Cin Cin Ristorante before earning my first Head Chef role at Charlie’s Little Italian. In 2017, I relocated to Tofino to lead Bravocados, a vegetarian bistro, later taking on the dual role of Head Chef at both Bravocados and the Italian wine bar Brie & Barrel in Port Alberni.

In 2021, I became the owner and Chef of Bravocados, gaining invaluable experience in restaurant management, business operations, and team development. Over four years, I navigated the challenges of ownership while continuing to elevate the dining experience for guests.

After selling Bravocados in early 2025, I returned to Victoria to re-focus on my passion for the craft of cooking.
