Joseph R. Thomas is an award-winning Executive Chef with over 20 years of experience cooking in top restaurants, hotels, and resorts across British Columbia, Ontario, South America and now, right in your home. He’s led high-energy kitchens, cooked for thousands, and appeared in national media, but his favorite table is a small one where the food, conversation, and wine can really shine.
Specializing in Italian, French, and Latin-inspired cuisine, Joseph creates restaurant-quality dinner parties that feel warm, relaxed, and personal. Think handmade pastas, beautifully seared proteins, vibrant seasonal vegetables, and menus designed specifically for your group—not something pulled from a template.

I did my apprenticeship training at Niagara College. I did most of my training in Italian kitchens learning old school techniques.
