I'm Chef Jorge Bendesky, Executive Chef and Partner at Kimball Coastal Eatery in National City, CA, and Executive Chef at Sessions by the Bay — San Diego’s first licensed cannabis consumption lounge offering a full-service dining experience. I bring globally inspired flavors, fine-dining technique, and years of professional training to private chef services and elevated catering. Whether it’s a backyard celebration or an upscale tasting menu, I create bold, memorable meals designed to match the moment.
Originally from Mexico City, I’ve spent the last decade refining my craft in professional kitchens across the country. I trained at the Culinary Institute LeNotre and the renowned Culinary Institute of America in Hyde Park, NY, and went on to lead culinary teams in a variety of settings — from high-volume restaurants to intimate chef’s tables. As Executive Chef & Partner at Kimball Coastal Eatery and the Executive Chef at Sessions by the Bay (California’s first licensed cannabis lounge with a restaurant-style food program), I create thoughtful, vibrant menus rooted in quality, culture, and creativity. Every event is a new opportunity to tell a story through food.
