Four years ago, I had the opportunity to open Mint the Food Truck a dream I had been dreaming up for years. We opened our organic, local all-natural eats, a vintage food truck in the spring of 2015. With the food truck, we owned a brick and mortar where I was able to acquire my Utah ServSafe kitchen manager certificate from the Health Department. In the years following we catered to locals, weddings, showers, parties, and more. I was able to collaborate with wedding designers and photographers, featured on Rachael Rays Blog and Instagram and participated and won $18,000.00 on Food Networks Guy’s Grocery Games. I’ve worked every role you can think up from Executive Chef to Sous Chef, to Salad prep and dishes to barista not excluding host and server. The kitchen is where you’ll always find me!
