Seasonal Italian food with a focus on handmade pasta

I have been cooking for 12 years. I just finished a three year stint at Restaurant Mon Lapin and Rotisserie La Lune.

Working with the best that the season has offer is important to me. When coming up with menus I like to imagine what regional Italian food looks like using mostly local ingredients.

I'm passionate about pasta and have a lot of experience making, shaping and cooking it.
