Dedicated culinarian with experience in global cuisine and high end fine dining

I am a professional chef with 35 years experience in culinary management including Michelin starred restaurants, five star hotels, James Beard Award winning venues and non-profits. I specialize in healthy, organic multi-cultural cuisine with emphasis on local ingredients and nutritional value. Colorado has been my home for 17 years and I have had the pleasure to work in both the Eagle Valley and the Roaring Fork Valley. Prior to my experiences here, I worked in Las Vegas, Lake Tahoe and Portland OR. I am originally from Asheville NC and have a solid background in WNC BBQ as well. If experience and variety are what you are looking for, I am able to provide both in a welcoming atmosphere with a ‘hospitality first’ attitude.

My mother’s side. She instilled the importance of a family meal to me at a very young age. I still use her biscuit recipe to this day.

Mise en place. Or ‘things in place’. It’s imperative to be organized in the kitchen. As a Servesafe Manager, cleanliness is extremely important to me.

Joshua Applegate was perfect! He as engaging and fun to converse with while not being intrusive. The food was really wonderful including taste, presentation and quality! He also paced the meal and the serving of it very well. I will hire him again in the future, if possible, without a doubt.
