A highly accomplished Chef couple, both graduates of the prestigious Instituto Culinario de México (ICUM). We bring over 30 years of combined experience in high-end Mexican and international gastronomy. Our culinary philosophy is driven by a passion for culture and tradition, creating culinary experiences that deliver "flavors that tell a story."

Chef Diana Lauterio:

A seasoned expert in traditional Italian haute cuisine and the art of Garde Manger. Her distinguished career includes over six years in international luxury hotel chains (Hyatt, Hilton), where she mastered high-volume, high-standard kitchen operations. Furthermore, she excels as a university lecturer, specializing in artistic techniques such as ice sculpting and Mukimono fruit and vegetable carving, while constantly experimenting with gastronomic trends. Co-founder of Khalo Fonda Boutique in Tabasco, Mexico.

Chef Edgar González:

A passionate custodian of Mexican heritage and culture. His expertise was forged directly with traditional cooks (cocineras y cocineros), gaining a deep command of the authentic Mexican cuisine's foundations, processes, and timing. Having worked in luxury hotels with a Mexican concept (Quinta Real), he has developed strong managerial skills and an affinity for building self-sufficient culinary teams. His experience consistently reflects his dual focus on culinary creation and strong operational leadership.
