Mike Sonier brings over 20 years of experience as an executive chef and restaurateur, with a focus on seasonal, carefully sourced ingredients, skillful technique, and thoughtfully paired menus.
Raised in the Maritimes, Mike developed a deep respect for coastal food and honest, soulful cooking. Now based on the West Coast, he draws from both regions, combining East Coast tradition with the abundance and diversity of his current surroundings. He spends time foraging, fishing, hunting, and sourcing ingredients firsthand, which shapes what is on the plate.
His approach is heavily influenced by travel, where he has learned from different cultures and communities through cooking and shared meals. These influences come through in a style that blends classical technique, centred on natural, ingredient-driven flavours.
Mike offers a range of dining experiences, from multi-course tasting menus to relaxed family-style meals, backyard barbecues, and passed canapés. Regardless of the format, his focus remains the same: creating memorable food experiences tailored to the occasion.
