Always with a smile, outstanding service, a passion for detail, and over 20 years of experience in international cuisines, Chef Zavala was born in Jalisco, Mexico. His culinary identity is shaped by his family roots and his deep knowledge of mexican cuisine—from the Pacific coast’s fresh seafood to the northern PREMIUM meat cuts, as well as the renowned “Farm-to-table” and wines of Baja California.

During a family trip, he fell in love with Valle de Guadalupe—the sunsets, vineyards, good wines, ranches, cheeses, the sea, and fresh local products—where he also met the love of his life. This passion inspired him to create his own place, Corazá Restaurante, set under a eucalyptus tree; a family project that blends traditional recipes made from scratch with modern techniques and the finest fresh ingredients. At Corazá, he focuses on building strong relationships with local producers and winemakers, fostering a true sense of community.

Specializing in seafood and slow-cooked smoked meats, Chef Zavala crafts every dish from scratch, highlighting the authentic flavors and quality of regional ingredients.

Chef Sebastían and his assistant both arrived (early!) with a warm, joyful presence, and offered help beyond the kitchen. As me and my friends finished up a game in the room over from the kitchen, they even offered to bring us beverages. The food was out of this world, with many complex flavors and textures. Sebastián is certainly a master of foods and flavors of this region. And the clean up could not have been any better. I could not have picked a better chef for the job. Thanks Sebastían!

Chef Sebastian and his soon to be wife were amazing! The decorated for the perfect anniversary ambiance, educated us on the dishes, kept us engaged in the process, and created beautiful and delicious plates! The poblano risotto was amazing and the tuna was to die for! I highly recommend Sebastian as your chef. Lovely!

Chef Sabastian Zavala created an unforgettable dining experience for my best friend's 60th birthday dinner. The grilled octopus ceviche was absolutely outstanding and easily one of the best dishes I have ever had. Every course (5) was beautifully prepared, full of flavor, with plenty of left overs for the next day! He was open to changes courses to accommodate guest which food allergies. Chef Zavala was professional, warm and attentive. He always had a smile on his face and made everyone interested in the food that he was serving. I would highly recommend Chef Sabastian Zavala for any special occasion.
