Sunday dinner in my childhood home was more than a meal — it was a tradition. Family gathered around the table, sharing stories and anticipation for what was coming out of the kitchen. Those moments shaped me. Watching my father cook and learning his techniques changed the course of my life. Sundays quickly became my training ground, standing beside him and perfecting my favorite dish, curry chicken.

That early passion grew into what is now G&B Hospitality. I am the “B” in G&B. After training under respected chefs and gaining experience across the industry, I met Chef Gavin Vasquez. What began as a professional partnership quickly became a brotherhood. Together, we built G&B as a hospitality staffing agency rooted in hard work, integrity, and a shared vision. Following Gavin’s untimely passing, I faced one of the most difficult chapters of my life. His memory, however, became the driving force behind my commitment to continue what we started.

During the challenges of the pandemic — one of the toughest periods in hospitality — G&B evolved. We expanded our focus, strengthened our identity, and redefined our mission. Today, I am proud to introduce the Chef Billy brand under the G&B Hospitality umbrella. We specialize in BBQ, intimate weddings, pop-ups, and private events, offering handcrafted signature products including dry rubs, marinades, sausages, pierogis, and cured meats.

Our cuisine celebrates the bold, vibrant influences of Jamaican, Grenadian, and Trinidadian flavors, honoring heritage while bringing people together around the table — just as those Sunday dinners once did for me.
