Accomplished Executive Chef with over 28 years of culinary expertise and 15 years of kitchen leadership experience, specializing in Modern Peruvian cuisine and its five distinctive expressions: Criollo, Italo-Peruvian, Chifa (Chinese-Peruvian), Nikkei (Japanese-Peruvian), and refined raw preparations such as ceviches and tiraditos.
My culinary approach is rooted in honoring tradition while elevating it through contemporary techniques, refined presentation, and thoughtful innovation. I am known for precision, creativity, and the ability to design dynamic menus that celebrate Peru’s rich cultural influences while meeting the expectations of modern fine dining.
