20yr Chef & Owner driven by a deep respect for Mexican history and tradition. From family Barbacoa to rare Agave, I honor our roots with organic masa.
With over 20 years in Mexican and Canadian kitchens, my journey began in my mother and aunts’ kitchens, followed by my family’s traditional lamb barbacoa business. I expanded my expertise at Brownstone Bistro, a Mediterranean bistro in Canada, and across multiple high-end seafood restaurants in Mexico.
In Toronto, I mastered bold, experimental flavors in the influential kitchens of Hanmoto, Seoul Shaker, and Pinky’s Ca Phe. Today, as owner of Sadsongs Cantina and DAM Sandwiches, I focus on organic, local products and the "root" of Latin cuisine: masa de maíz.
A specialist in rare agave spirits—Tequila, Mezcal, and Sotol—I combine two decades of culinary history with refined mixology. Join us to explore the diverse regions of Mexico through world-class sips in a relaxed, comfortable atmosphere.
