Pursuing stimulation, I found myself under the Iron fist of Head Chef Declan Horgan at acclaimed restaurant, Fade Street Social. Declan's passion was a catalyst, I began the life of the traveling Chef. Keen to discover my senses, I wandered to the coast of the Salish Sea in British Columbia, Canada. Becoming a disciple of Chef Melissa Craig. Preparing some of the finest seafood the world has to offer.
Liberated by the zest of Latin America, chapters in Mexico and Peru brought fresh herbs, vegetables and the sacred citrus.Vibrant colours and lively flavours left me unbridled.
Drawn to the Arctic Circle, in polar conditions my tenacity was forged in the fire of Maameo, Norway's only 3 star Michelin restaurant. Utilising ancient cooking techniques and unique local ingredients, I was awakened. To say the least.
