Chef and owner of restaurant Maito in Panama, Panama city. Considered #20 of Latin America by the guide of 50 best restaurants of Latin America by St.Pellegrino. I mostly cook fish and seafood and try to use the most of local ingredients with a global techniques and a Panamanian flavors. I also have 7 other concepts between them Cafe Unido a local coffee roaster which is my second big passion!
