Charismatic, educate with a pinch of crazyness
I am a professional chef with 12 years of experience. After finishing at the kitchen academy I started traveling through Italy, first to Verona at Ristorante Tre Corone where i spent one year preparing 12 different kinds of homemade pasta for 300 guests a day, and then to Padova at Pasticceria Atelier Biasetto where I learned precious secrets about the pastry and dessert creation. I moved afterward to Lugano, in the southern part of Switzerland where I´ve been experiencing my first role as a sous chef in the Mediterranean restaurant "Degli Amici" while organizing and managing side private events and dinners. Tired of the habit I followed a job offer in London where hired as sous chef I cooperate to the opening of the Italian restaurant and wine bar "Dego´", it was there that I met my kitchen chemistry brother Samuele Silvestri and one year later we moved to Venezia in charge of a big opening at Rialto bridge "Al Pesador". After a great success, we opened "Ristorante Riviera" for the same company and two years later we got in charge of the kitchen at "Antico Martini" the restaurant of the famous Venetian theatre La Fenice. During these years we participated at the Italian Kitchen Championship and after a first price and a gold medal, I met the former sous chef of Restaurant Noma whom back then was just started into the star climbing. Curious and excited I left Venice and landed in Copenhagen where at first I learned the new Nordic cuisine at Noma and then I experience different danish kitchen reality passing through Italian restaurants like "Il Peccato" and Danish ones like Madklubben and Atlas. Completely in love with this city, I started working at my own projects and in January 2017 I opened my first owned company, Ris8 a small Risotteria located in Vesterbro where I am still working and having fun nowadays.
