Left toxic restaurant culture in 2021 to do some private chef and catering work as well as launch my wife and my art business.

Escaveche: assorted seafood cured/ cooked in citrus juice. W/ razor thin fresh onion, & herbs
Lollipop chicken w/ Mole
Queso fundito
Street corn salad. Charred corn, sour cream sauce, chilies, garlic, onion, radish, greens & cilantro. Toooed with fried tortilla strips
Achiote chicken. Chicken thighs marinated in achiote, lime, roasted garlic, local honey, and chilis. Roasted to perfection. Served w:/ rice and charro beans. Tortillas and pineapple salsa
Cheese & charred onions enchiladas w/ ancho cheese red sauce
Duck tostada w/ charred tomato salsa
Fried avocados. Avacado, (stuffed w/ mushrooms, chilis & Oaxaca cheese. Breaded in Panko and fried golden. Covered in chipotle cream sauce. (Vegetarian)
