Graduate of Ottawa’s Algonquin College Culinary Management program. Was appointed Executive Chef of Biagios Italian Kitchen after Culinary School and from there moved to Vegan restaurant Zen Kitchen. Represented Zen Kitchen at Ottawa’s annual Gold Medal Plates Competition placing Silver along Side Excecutive Chef & Owner Caroline Ishi. I moved on to work beside Top Chef Canada Season 2 Finalist & Top Chef Canada All-Stars Johnathon Korecki at Sidedoor Contemporary Kitchen & Bar. Representing ar Ottawa’s Gold Medal Plates Competition once again finishing with Silver and Bronze respectively. It was here I found my love for South East Asian Cuisine / Chinese cooking techniques. I moved to Toronto and found myself at Head Chef and Owner Scott Vivian’s “Nose to Tail” machine BEAST Restaurant. Whole animal butchery, local farmers and forging of wild ingredients became second nature while learning what it takes to run a successful restaurant in a major city. In 2021 CHESHIRE CAT was born, where i specialize in private fine dining multi course tasting menus, catering, weddings, private parties & events.

I booked Chef Anthony on behalf of my CEO for a YPO function. I was apprehensive as I knew I was not going to be able to experience the dishes in person but my CEO and his group were blown away. Anthony's presentation and creativity are second to none. He was incredibly communicative and accommodating throughout the entire process. We will 1000% book again with him in the fututre!

This was my first experience reaching out to the a private chef at the cottage so there were no advanced expectations. It's something I'd recommend to anyone. The quality of the food is at the highest level. Chef Anthony would review all the ingredients as he presented each course. We had 7 courses. Each course was perfectly timed, including a mid-dinner break. He leaves the kitchen spotless, including cleaning all the dishes. We will do this again.

Chef Anthony was very personable and great to chat with while preparing the dinner. Not sure how he juggled it all but the food was cooked to perfection. Clean up was excellent as well. We would definitely recommend him.
